1–2 tablespoons Hot Sauce
1 cup Yellow Cornmeal
½ cup All-Purpose Flour
2–3 tablespoons Cajun Seasoning
½ teaspoon Salt
¼ teaspoon Black Pepper
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
1 teaspoon Paprika

Ensure your catfish fillets are properly prepared. Pat them dry with paper towels. This is crucial for achieving a crispy coating.
In a shallow dish, combine the buttermilk and hot sauce. Submerge the catfish fillets in the mixture, ensuring they are fully coated. Cover the dish and refrigerate for at least 30 minutes, or up to 2 hours.
While the catfish is marinating, prepare the breading mixture. In a separate shallow dish, combine the cornmeal, flour, Cajun seasoning, salt, pepper, garlic powder, onion powder, and paprika. Mix well.
