1 boneless, skinless chicken breast (6–8 ounces)
1 brioche bun
1/2 cup buttermilk
1 tablespoon hot sauce (optional)
1/2 cup all-purpose flour
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 large egg
Pickles
Lettuce
Tomato
Mayonnaise
Oil spray
Instructions
If your chicken breasts are very thick, use a meat tenderizer to pound them to an even thickness of about ½ inch. This ensures even cooking.
In a bowl, combine buttermilk and hot sauce (if using). Add the chicken breasts and let them marinate for at least 30 minutes, or up to overnight in the refrigerator. This tenderizes the chicken and adds flavor.
In a shallow dish, whisk together the flour, paprika, garlic powder, onion powder, salt, and pepper.
In another shallow dish, whisk the egg.
Remove a chicken breast from the buttermilk mixture, letting any excess drip off. Dredge it in the flour mixture, pressing to ensure it adheres. Dip it in the egg wash, then dredge it again in the flour mixture, making sure it's fully coated.
Repeat the breading process with the remaining chicken breasts. Place the breaded chicken on a baking sheet.
Preheat your air fryer to 375°F (190°C).
Lightly spray the air fryer basket with oil spray. Place the breaded chicken breasts in the air fryer basket in a single layer, being careful not to overcrowd. You may need to cook in batches. Spray the tops of the chicken breasts with oil spray.
Air fry for 10-12 minutes, flipping halfway through, until the chicken is cooked through and golden brown. The internal temperature should reach 165°F (74°C).
While the chicken is cooking, prepare your buns. Toast them lightly if desired. Spread mayonnaise on both halves of the bun. Place lettuce, tomato, and pickles on the bottom bun.
Place the cooked chicken breast on top of the toppings.
Top with the other half of the bun and serve immediately.
