Instructions
- Prep the Chicken and Veggies: Cut the chicken breasts into uniform 1-inch cubes. Chop your vegetables into evenly sized pieces for consistent cooking.
- Marinate for Maximum Flavor: In a large bowl, combine the chicken and vegetables. Add olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper. Mix well and marinate for at least 15 minutes, or up to an hour in the refrigerator.
- Air Fry to Perfection: Preheat your air fryer to 400°F (200°C). Place the chicken and vegetables in the air fryer basket in a single layer. Air fry for 12-15 minutes, flipping halfway through, until the chicken is cooked through (165°F/74°C) and the vegetables are tender.
- Serve and Enjoy: Remove from the air fryer and serve immediately. Enjoy as is, or serve over rice, quinoa, or pasta. Garnish with fresh herbs.
