Instructions
Pat Dry the Cod: Use paper towels to thoroughly pat dry the cod fillets. This is crucial for achieving a crispy coating.
Set Up the Breading Station: Prepare three shallow dishes. In the first dish, combine the flour, salt, and pepper. In the second dish, add the beaten eggs. In the third dish, mix the panko breadcrumbs, Parmesan cheese (if using), and dried herbs.
Coat in Flour: Dredge each cod fillet in the flour mixture, ensuring it’s fully coated. Shake off any excess flour.
Dip in Egg: Dip the floured cod fillet into the beaten eggs, making sure it’s completely covered. Allow excess egg to drip off.
Coat in Breadcrumbs: Press the egg-coated fillet into the panko breadcrumb mixture, ensuring a generous and even coating on all sides. Gently press the breadcrumbs to adhere.
Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for 5 minutes.
Prepare the Air Fryer Basket: Lightly grease the air fryer basket with olive oil spray to prevent sticking.
Arrange the Cod: Place the breaded cod fillets in the air fryer basket in a single layer, making sure they are not overlapping. You may need to cook in batches depending on the size of your air fryer.
Spray with Oil: Lightly spray the tops of the breaded cod fillets with olive oil spray. This helps them get golden brown and crispy.
Air Fry: Air fry for 10-12 minutes, flipping halfway through, until the cod is cooked through and the breading is golden brown and crispy. The internal temperature of the cod should reach 145°F (63°C).
Serve Immediately: Carefully remove the crispy breaded cod from the air fryer and serve immediately.
Garnish (Optional): Serve with lemon wedges, tartar sauce, or your favorite dipping sauce.
