- 1.5 lbs Yukon Gold potatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Red pepper flakes for a touch of heat (optional)
Instructions
- Wash and scrub the Yukon Gold potatoes. Cut the potatoes into uniform 1-inch cubes.
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, chopped fresh dill, salt, and pepper. Add a pinch of red pepper flakes if desired.
- Add the cubed potatoes to the bowl with the lemon dill marinade. Toss well to ensure that all the potatoes are evenly coated. Let the potatoes marinate for at least 15 minutes, or up to 30 minutes.
- Preheat your air fryer to 400°F (200°C).
- Place the marinated potatoes in the air fryer basket in a single layer. Avoid overcrowding the basket. Air fry for 15-20 minutes, flipping halfway through, until the potatoes are golden brown and tender.
- Remove the potatoes from the air fryer and serve immediately.
