  • 2 large russet potatoes, scrubbed
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions

Instructions

  1. Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel. Prick each potato several times with a fork. This allows steam to escape during cooking, preventing explosions and ensuring even cooking.
  2. In a small bowl, drizzle the olive oil over the potatoes. Sprinkle with salt and pepper, ensuring they are evenly coated. The oil helps to promote browning and crispiness.
  3. Place the potatoes in the air fryer basket, making sure they are not overcrowded. Cook at 400°F (200°C) for 40-50 minutes, or until the potatoes are easily pierced with a fork. The cooking time will vary depending on the size of your potatoes and the model of your air fryer. Check for doneness after 40 minutes.
  4. While the potatoes are cooking, prepare your toppings. Cook the bacon until crispy and crumble it. Shred the cheese and chop the green onions. Have everything ready to go when the potatoes are done.
  5. Carefully remove the potatoes from the air fryer. Using a sharp knife, slice each potato lengthwise. Fluff the inside of the potato with a fork. Sprinkle generously with shredded cheese. Return the potatoes to the air fryer for 1-2 minutes, or until the cheese is melted and bubbly.
  6. Remove the loaded potatoes from the air fryer. Top with crumbled bacon, sour cream, and chopped green onions. Serve immediately and enjoy!
