  • Total Time: 30 minutes
  • Yield: 6 servings

Ingredients

  • Russet potatoes
  • Unsalted butter
  • Whole milk or heavy cream
  • Egg yolks
  • Salt
  • Pepper
  • Nutmeg
  • All-purpose flour
  • Eggs
  • Panko breadcrumbs
  • Cooking spray
  • Instructions

  • Peel and quarter the potatoes. Place them in a large pot of cold water and bring to a boil. Cook until tender, about 15-20 minutes.
  • Drain the potatoes well and return them to the pot. Add butter, milk (or cream), egg yolks, salt, pepper, and nutmeg. Mash until smooth and creamy.
  • Transfer the mashed potato mixture to a bowl, cover with plastic wrap, and refrigerate for at least 2 hours, or preferably overnight.
  • Once chilled, scoop out about 2 tablespoons of the potato mixture and shape it into a cylinder or oval. Repeat with the remaining mixture.
  • Set up three shallow dishes. In the first, place the all-purpose flour. In the second, whisk the eggs. In the third, place the panko breadcrumbs.
  • Dredge each croquette in the flour, then dip it in the egg wash, and finally coat it in the panko breadcrumbs, ensuring they are evenly coated.
  • Preheat your air fryer to 400°F (200°C).
  • Lightly spray the air fryer basket with cooking spray. Place the croquettes in the basket in a single layer, being careful not to overcrowd. You may need to cook them in batches. Spray the tops of the croquettes with cooking spray.
  • Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the croquettes from the air fryer and serve immediately.
