4 medium russet potatoes
2 tablespoons olive oil
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup cooked crumbled bacon
1/4 cup sour cream
2 tablespoons chopped green onions
Instructions
Wash russet potatoes thoroughly and pat them dry. Poke each potato several times with a fork.
Place the potatoes in the air fryer basket and cook at 400°F (200°C) for 30-40 minutes, or until they are easily pierced with a fork.
Remove the potatoes from the air fryer and let them cool slightly. Slice each potato in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
Brush the inside and outside of each potato skin with olive oil. Season generously with salt and pepper.
Sprinkle a generous amount of shredded cheddar cheese inside each potato skin. Add bacon if desired.
Place the cheese-filled potato skins back in the air fryer basket. Cook at 350°F (175°C) for 5-7 minutes, or until the cheese is melted and bubbly, and the skins are golden brown and crispy.
Remove the Air Fryer Potato Skins from the air fryer and let them cool slightly. Top with crumbled bacon, sour cream, and chopped green onions.
