  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked crumbled bacon
  • 1/4 cup sour cream
  • 2 tablespoons chopped green onions
  • Instructions

  • Wash russet potatoes thoroughly and pat them dry. Poke each potato several times with a fork.
  • Place the potatoes in the air fryer basket and cook at 400°F (200°C) for 30-40 minutes, or until they are easily pierced with a fork.
  • Remove the potatoes from the air fryer and let them cool slightly. Slice each potato in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato attached to the skin.
  • Brush the inside and outside of each potato skin with olive oil. Season generously with salt and pepper.
  • Sprinkle a generous amount of shredded cheddar cheese inside each potato skin. Add bacon if desired.
  • Place the cheese-filled potato skins back in the air fryer basket. Cook at 350°F (175°C) for 5-7 minutes, or until the cheese is melted and bubbly, and the skins are golden brown and crispy.
  • Remove the Air Fryer Potato Skins from the air fryer and let them cool slightly. Top with crumbled bacon, sour cream, and chopped green onions.
