Instructions

  1. Wash, peel, and dice the potatoes into uniform ½-inch cubes. Place the diced potatoes in a bowl of cold water for about 15-20 minutes. Drain the potatoes thoroughly and pat them dry with paper towels.
  2. Dice the bell peppers and onion into ½-inch pieces.
  3. In a large bowl, combine the diced potatoes, bell peppers, and onion. Drizzle with olive oil and toss to coat evenly.
  4. Add the salt, pepper, garlic powder, and paprika to the bowl. Toss again to ensure that the potatoes and vegetables are well-seasoned.
