Instructions
- Wash, peel, and dice the potatoes into uniform ½-inch cubes. Place the diced potatoes in a bowl of cold water for about 15-20 minutes. Drain the potatoes thoroughly and pat them dry with paper towels.
- Dice the bell peppers and onion into ½-inch pieces.
- In a large bowl, combine the diced potatoes, bell peppers, and onion. Drizzle with olive oil and toss to coat evenly.
- Add the salt, pepper, garlic powder, and paprika to the bowl. Toss again to ensure that the potatoes and vegetables are well-seasoned.
- Preheat your air fryer to 400°F (200°C). Place the potato mixture in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding.
