Instructions
- Combine raspberries, sugar, lemon juice, and cornstarch in a small saucepan. Cook on medium heat, stirring occasionally until thickened and raspberries break down, about 5-7 minutes. Remove from heat, stir in vanilla extract if using, and cool completely.
- Roll out puff pastry on a lightly floured surface if needed. Cut into 3-4 inch squares using a knife or pizza cutter.
- Place a spoonful of raspberry filling in the center of each pastry square. Fold into a triangle or rectangle and press edges with a fork to seal.
- Beat the egg and brush the top of each pastry with the egg wash using a pastry brush to achieve a shiny golden finish.
- Preheat air fryer to 350°F (175°C). Arrange pastries in a single layer with space between. Cook for 10-12 minutes until puffed and golden brown, watching to prevent burning.
- Remove pastries from air fryer and cool on a wire rack for a few minutes. Dust with powdered sugar and serve warm or at room temperature.
