  • Instructions

  • Wash the potatoes thoroughly. Peel them if you prefer, but leaving the skin on adds a nice texture and extra nutrients. Slice the potatoes into thin planks, about 1/4 inch thick. Then, stack the planks and cut them into shoestring-thin fries. Aim for uniform size so they cook evenly.
  • Place the cut fries in a large bowl filled with cold water. Soak them for at least 30 minutes (or up to 2 hours), changing the water a couple of times during soaking.
  • After soaking, drain the fries well. Pat them completely dry with paper towels.
  • In a clean bowl, toss the dried fries with olive oil, salt, pepper, and any other seasonings you like. Make sure the fries are evenly coated.
  • Preheat your air fryer to 400°F (200°C). Place the seasoned fries in the air fryer basket in a single layer. Don’t overcrowd the basket; you may need to cook them in batches. Air fry for 10-15 minutes, flipping halfway through, until they are golden brown and crispy.
  • Once the fries are done, remove them from the air fryer and serve immediately. Pair them with your favorite dipping sauce.
