2 large russet potatoes
1 tablespoon olive oil (or avocado oil)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon paprika (optional)
Instructions
Wash the potatoes thoroughly. Peel them if you prefer, but leaving the skin on adds a nice texture and extra nutrients. Slice the potatoes into thin planks, about 1/4 inch thick. Then, stack the planks and cut them into shoestring-thin fries. Aim for uniform size so they cook evenly.
Place the cut fries in a large bowl filled with cold water. Soak them for at least 30 minutes (or up to 2 hours), changing the water a couple of times during soaking.
After soaking, drain the fries well. Pat them completely dry with paper towels.
In a clean bowl, toss the dried fries with olive oil, salt, pepper, and any other seasonings you like. Make sure the fries are evenly coated.
Preheat your air fryer to 400°F (200°C). Place the seasoned fries in the air fryer basket in a single layer. Don’t overcrowd the basket; you may need to cook them in batches. Air fry for 10-15 minutes, flipping halfway through, until they are golden brown and crispy.
Once the fries are done, remove them from the air fryer and serve immediately. Pair them with your favorite dipping sauce.
