Boil the Potatoes: Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender.
Drain and Cool Slightly: Once the potatoes are cooked, drain them well and let them cool slightly.
Preheat Air Fryer: Preheat your air fryer to 400°F (200°C).
Smash the Potatoes: Place the slightly cooled potatoes on a baking sheet lined with parchment paper. Gently smash each potato with the bottom of a glass or a potato masher.
Season and Air Fry: In a small bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper. Drizzle this mixture evenly over the smashed potatoes.
Air Fry to Crispy Goodness: Carefully transfer the smashed potatoes to the preheated air fryer basket, working in batches if necessary to avoid overcrowding. Air fry for 12-15 minutes, or until the potatoes are golden brown and crispy, flipping halfway through.
