1 pound catfish fillets, skinless and boneless
1 cup yellow cornmeal
½ cup all-purpose flour
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon cayenne pepper
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
1 large egg, beaten
2 tablespoons milk

Pat the catfish fillets dry with paper towels.
If fillets are large, cut into smaller pieces.
Combine paprika, garlic powder, onion powder, cayenne pepper, thyme, salt, and pepper. Season catfish fillets evenly.
Set up a dredging station: flour, egg wash (egg and milk), cornmeal.
Dredge each fillet in flour, then egg wash, then cornmeal.
Preheat air fryer to 400°F (200°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray.
Arrange catfish fillets in the air fryer basket in a single layer.
Air fry for 8-10 minutes, flip, and cook for another 6-8 minutes, or until golden brown and internal temperature reaches 145°F (63°C).
