- 1 cup fresh strawberries, hulled and chopped

- 1 tablespoon cornstarch

- Powdered sugar (optional, for dusting)
Instructions
- In a mixing bowl, combine the chopped strawberries with granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently until well incorporated. Optionally, cook the mixture in a small saucepan over medium heat for 3-5 minutes until thickened. Let the filling cool completely.
- Lightly flour your workspace and roll out the thawed puff pastry to smooth out folds. Cut the dough into roughly 4×4 inch rectangles or squares.
- Place a spoonful of cooled strawberry filling onto the center of half the pastry pieces, leaving a border. Brush edges with beaten egg, top with another pastry piece, and seal edges firmly with a fork.
- Brush tops of each hand pie with beaten egg for a shiny golden finish. Arrange pies in a single layer in the air fryer basket without overlapping.
- Set air fryer to 350°F (175°C) and cook for 10-12 minutes until golden brown and puffed. Check at 8 minutes for doneness if needed. Let pies cool on a wire rack for at least 10 minutes.
- Dust cooled hand pies with powdered sugar if desired. Serve fresh with tea or hot chocolate for a perfect Valentine’s Day treat or snack.
