Instructions
- Start by heating olive oil in a small skillet over medium heat. Add the minced garlic and chopped shallot, sautéing until softened and fragrant, about 2-3 minutes. Then add the chopped spinach and cook until just wilted, about 1-2 minutes. Remove from heat and transfer the mixture to a mixing bowl. Next, add the softened cream cheese, grated Parmesan, lemon zest, and fresh dill into the bowl with the spinach mixture. Stir everything together until well-combined. Season with salt and black pepper to taste, then set aside.
- Take your salmon fillets and, using a sharp knife, create a pocket by cutting horizontally through the thickest part of each fillet. Be careful not to cut all the way through. Pat the salmon dry with paper towels, then season both inside and outside with salt and pepper.
- Spoon the prepared stuffing mixture evenly into each salmon fillet pocket. Press gently to ensure the stuffing stays in place.
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes. Place the stuffed salmon fillets carefully in the air fryer basket, ensuring they are spaced apart for even cooking. Cook for 12-15 minutes or until the salmon is flaky and cooked through. The internal temperature should reach 145°F (63°C).
- Once cooked, remove the salmon from the air fryer and drizzle with fresh lemon juice. Garnish with extra dill sprigs and lemon wedges if desired. Serve immediately while warm.
