Total Time:4 hours 55 minutes
Yield:16 bars 1x
Ingredients
Scale
1 ½ cups graham cracker crumbs
5 tablespoons unsalted butter, melted
¼ cup granulated sugar
24 ounces cream cheese, softened
¾ cup granulated sugar
2 large eggs
½ cup sour cream
1 teaspoon vanilla extract
4 ounces semi-sweet chocolate, melted
½ cup caramel sauce (store-bought or homemade)
Instructions
Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9×13 inch baking pan lined with parchment paper.
Bake the Crust: Bake the crust in a preheated oven at 350°F (175°C) for 8-10 minutes, or until lightly golden. Remove from the oven and let cool slightly.
Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the sour cream and vanilla extract.
Divide the Filling: Pour about two-thirds of the cheesecake filling over the baked crust.
Create the Chocolate Swirl: Gently dollop spoonfuls of the melted chocolate over the remaining cheesecake filling. Use a knife or skewer to create a swirl pattern.
Pour over the Crust: Carefully pour the chocolate swirled filling over the plain filling in the baking pan.
Bake the Cheesecake Bars: Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is just slightly jiggly.
Cool and Chill: Let the cheesecake bars cool completely in the pan, then refrigerate for at least 4 hours, or preferably overnight.
Add the Caramel Topping: Drizzle the caramel sauce over the chilled cheesecake bars.
