  • Total Time: 4 hours 55 minutes
  • Yield: 16 bars 1x

Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • 24 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 teaspoon vanilla extract
  • 4 ounces semi-sweet chocolate, melted
  • ½ cup caramel sauce (store-bought or homemade)
  • Instructions

  • Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a 9×13 inch baking pan lined with parchment paper.
  • Bake the Crust: Bake the crust in a preheated oven at 350°F (175°C) for 8-10 minutes, or until lightly golden. Remove from the oven and let cool slightly.
  • Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, then stir in the sour cream and vanilla extract.
  • Divide the Filling: Pour about two-thirds of the cheesecake filling over the baked crust.
  • Create the Chocolate Swirl: Gently dollop spoonfuls of the melted chocolate over the remaining cheesecake filling. Use a knife or skewer to create a swirl pattern.
  • Pour over the Crust: Carefully pour the chocolate swirled filling over the plain filling in the baking pan.
  • Bake the Cheesecake Bars: Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is just slightly jiggly.
  • Cool and Chill: Let the cheesecake bars cool completely in the pan, then refrigerate for at least 4 hours, or preferably overnight.
  • Add the Caramel Topping: Drizzle the caramel sauce over the chilled cheesecake bars.
  • Cut and Serve: Cut into bars and serve. Enjoy!
