2 tablespoons granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 large egg
1 teaspoon vanilla extract

Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Pour about 2-3 inches of vegetable oil into a deep pot or frying pan. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C). If you don’t have a thermometer, you can test the oil by dropping a small amount of batter into it. If the batter sizzles and turns golden brown in about 1-2 minutes, the oil is ready.
Using a funnel, piping bag, or spoon, release small dollops of batter into the hot oil. Work in batches, being careful not to overcrowd the pot.
Fry the funnel cake bites for about 1-2 minutes per side, or until they are golden brown and crispy. Use a slotted spoon or spider to flip them over as needed.
Remove the funnel cake bites from the oil with a slotted spoon or spider and place them on a plate lined with paper towels to drain off any excess oil. Allow them to cool for a few minutes.
Generously dust the funnel cake bites with powdered sugar. Serve immediately and enjoy!
