- 2 large eggs, beaten
- 2 tablespoons olive oil (or avocado oil)

- Prepare the Chicken: Cut the chicken breasts into evenly sized pieces (about 1-inch thick). This helps them cook evenly.
- Set up the Breading Stations: In a shallow dish, combine the gluten-free flour, gluten-free breadcrumbs (or almond flour), paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper (if using), salt, and pepper. Mix well. In another shallow dish, beat the eggs.
- Bread the Chicken: Dip each piece of chicken into the beaten eggs, allowing any excess to drip off. Then, dredge it in the gluten-free flour mixture, ensuring it’s fully coated. Press the mixture gently onto the chicken to help it adhere.
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for 5 minutes.
- Air Fry the Chicken: Spray the air fryer basket with cooking spray. Place the breaded chicken pieces in the basket in a single layer, making sure they aren’t overcrowded. You may need to cook the chicken in batches. Drizzle the chicken with olive oil (or avocado oil).
- Cook the Chicken: Air fry for 10-12 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C).
- Serve and Enjoy: Remove the Gluten Free Air Fryer Chicken from the air fryer and let it cool slightly before serving. Serve with your favorite dipping sauces and sides.
