Instructions
- Preparation (10 minutes)
- Pat the chicken breasts dry with paper towels.
- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, basil, thyme, salt, and pepper.
- Place the chicken breasts in the bowl with the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
- Cooking (20 minutes)
- Preheat your air fryer to 380°F (190°C).
- Place the marinated chicken breasts in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook in batches if necessary.
- Air fry for 15-20 minutes, flipping halfway through, until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to verify the temperature.
- In the last 5 minutes of cooking, add the halved cherry tomatoes, Kalamata olives, and thinly sliced red onion to the air fryer basket. This will warm them slightly and infuse the flavors.
- Once the chicken is cooked, remove it from the air fryer and transfer it to a serving platter. Sprinkle with crumbled feta cheese and fresh parsley.
