  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preparation (10 minutes)
  2. Pat the chicken breasts dry with paper towels.
  3. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, basil, thyme, salt, and pepper.
  4. Place the chicken breasts in the bowl with the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  5. Cooking (20 minutes)
  6. Preheat your air fryer to 380°F (190°C).
  7. Place the marinated chicken breasts in the air fryer basket in a single layer, ensuring they are not overcrowded. Cook in batches if necessary.
  8. Air fry for 15-20 minutes, flipping halfway through, until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Use a meat thermometer to verify the temperature.
  9. In the last 5 minutes of cooking, add the halved cherry tomatoes, Kalamata olives, and thinly sliced red onion to the air fryer basket. This will warm them slightly and infuse the flavors.
  10. Once the chicken is cooked, remove it from the air fryer and transfer it to a serving platter. Sprinkle with crumbled feta cheese and fresh parsley.
